I have a whole turkey left over, so I thought I would try to make something other than turkey tetrazini this year. Make a salad to go with or serve whatever leftover veggies you have.
For the Ravioli:
1 cup leftover turkey, shredded and/or chopped well
2-3 tablespoons of leftover cranberry sauce or chutney
2 tablespoons of greated Parmesan cheese
1 egg
1 tablespoon chopped fresh parsley
1-2 tablespoons of bread crumbs
1 package of wonton wrappers
In a bowl, mix the cranberry sauce, turkey, bread crumbs, parsley, egg and cheese together t make a pasta filling. Layout half of your wonton wrappers and brush the edges with water. Place about 1 tablespoon of the turkey mixture in the center of each wonton wrapper then cover with another wrapper and seal the edges.
In a large pot, boil some water with enough salt to make it like sea water. When boiling, add the ravioli and stir once to prevent sticking. Cook for about 3 minutes or until they all float to the top of the water.
For the Sauce:
4 tablespoons of butter
2 tablespoons of chopped fresh sage
salt
pepper
In a small sauce pan, melt the butter over a medium low heat until light brown and the foam is all gone. Add the sage and cook for about 1minute more. Pour over the ravioli and serve immediately.
Alternatively, you could make or reheat some gravy and serve that over the pasta.
