Quick Dinner : Chicken Fried Steak with Sweet Potato Fries

For the Sweet Potato Fries:

2 medium sweet potatoes
2 tablespoons of vegetable oil (canola will work too)
salt

Peel the sweet potatoes then cut them into shoestring size fries. Toss them with the oil and a little salt. Spread them out on a cookie sheet in a single layer and bake them at 450 degrees for about 20 minutes or until they're crispy.

For the Chicken-Fried Steak:

2 pounds of cube steak, pounded thin
salt
pepper
1 cup of flour
1 tablespoon of Old Bay seasoning
1 teaspoon of dries thyme (fresh will work too, just add a little more)
2 eggs
1/2 cup milk
1/2 cup vegetable oil (or canola)

Season the steaks with salt and pepper. Mix the flour, Old Bay, and thyme together in a shallow dish. Mix the eggs and milk together in another shallow dish. Coat the steaks in flour, then egg, then flour again. Set aside for 5-10 minutes before you start frying them. This makes a good goo on the outside.

Heat the oil in a frying pan over medium high heat.

Fry the steaks for until golden brown - about 3-4 minutes on each side. Don't put too many in the pan - you don't want them to be touching.

If you want gravy, use your frying pan, leaving 1 tablespoon of oil in it. Add 3 tablespoons of flour (the left over with the Old Bay and thyme is ideal) and whisk into the oil until smooth. Then add about 2 cups of chicken stock to the flour and oil mix. Let it come to a boil. Add a little more milk or cream (no more than 1/2 a cup) and cook until thick like gravy should be. It should take about 7 minutes to thicken up.

Serve with your choice of vegetable and you have a good old fashioned meal. Canned green beans would prolly give you that classic diner experience.
