This is a super quick and easy dinner. Thanks go to my neighbor Rita for sending it to me! It makes 2 sandwiches and would be really good with a mixed greens salad with some dried fruit and nuts in it.
For the sandwiches:
4 thick slices of multigrain bread
vegetable oil
4 slices Havarti cheese
4 ounces thinly sliced deli mesquite turkey (about 6 slices)
1/4 small Granny Smith Apple cut into 8 thin slices
Brush a little vegetable oil on one side of each bread slice. Lay them oil side down on cutting board. Layer the cheese, turkey, apple slices and a little of the marmelade on one peice of bread andtop with the other piece. Make sure the oiled sides are out so you can grill the sandwich.
Heat Grill pan over medium -low heat. Place sandwiches in the pan and press down to grill well. If you want to, you can cover them with another pan or plate and weight it down with some soup cans to press the sandwiches really flat. Cook 3-4 minutes or until grill marks appear and the cheese is melted, turning once.
For the Onion-Cranberry Marmalade:
1/4 cup of dried cranberries, sweetened
1 cup onion, thinkly sliced
2 tablespoons cider vinegar
2 tablespoons of orange marmelade
Pour 2 tablespoons hot water over 1/4 cup sweetened dried cranberries and let stand 5 minute. Meanwhile, heat 1 cup thinly sliced onion in a pan. Cook the onions for about 5 minutes or until onion softens and begins to caramelize. Stir them often. Add 2 tablespoons cider vinegar; scrape the brown bits from bottom of pan. Add 2 tablespoons orange marmalade, cranberries, and any water left from soaking. Bring to a boil; reduce heat and simmer 1 minute. Remove from heat; cool slightly.
