This one is really easy!
For 4 stacks you'll need:
4 Medium Portabello Mushroom tops
1 Large Tomato
4 Slices of fresh Mozzarella cheese
Salt
Pepper
Oregano
Olive Oil
Grated Parmesan
Clean the mushroom tops. Slice the tomato into 4 thick slices. Stack the mushroom (on the bottom) then a slice of mozzarella then the tomato slice. Sprinkle with salt, pepper and some oregano then drizzle with a little bit of olive oil. Top with some parmesan cheese and bake at 350 degrees for about 20 minutes or until the cheese is melted.
Fry up some sweet italian sausage (I use chicken sausage) in a pan with a little bit of olive oil and viola - a fast healthy dinner.
